Why plant-based versions fail — and how to prevent it
The two most common failures are thinness and flatness. Thinness comes from removing fat and collagen without replacing body: fix it with cashew cream, blended beans, a starch slurry or a longer reduction. Flatness comes from missing umami and salt: fix it with fermented ingredients, browned tomato paste, dried mushroom powder or a small amount of soy sauce.
The third failure is texture. Firm tofu pressed and frozen once, then thawed, takes on a fibrous chew that raw tofu never has. Jackfruit shreds like slow-cooked meat. Seitan holds up to searing. Choose the protein for the texture the dish needs, not for convenience.

Reaching for vegan cheese first
Most classic cheese sauces are better rebuilt from cashews, starch and nutritional yeast than from a melted commercial block.
Forgetting the browning
