8 hidden animal ingredients lurking in 'vegan' food

Reading an ingredient label as a vegan is a sport. Manufacturers love Latin names, catch-all terms like "natural flavors," and additives that sound chemical but come straight from animals. Here are the most common hidden animal ingredients — and what they look like on a label.

1. Carmine (E120, cochineal, carminic acid)

A bright red dye made from crushed scale insects. Found in yogurts, juices, candies, lipsticks, and "fruit-flavored" cereals. Look for: carmine, cochineal extract, natural red 4, E120, carminic acid.

2. Gelatin

Boiled animal skin, bones, and connective tissue. Hides in gummies, marshmallows, jell-o, capsules, and even some yogurts. Vegan swap: agar agar or pectin.

3. Whey & casein

Both are dairy proteins that turn up in protein bars, processed bread, "non-dairy" coffee creamers, and chips. Whey, whey protein, casein, caseinate, lactoglobulin, lactalbumin— all dairy.

4. L-cysteine

A dough conditioner often derived from duck feathers or human hair. Common in commercial bagels, croissants, and fast-food buns. Synthetic and fermented versions exist, but they're rarely labeled.

5. Shellac (confectioner's glaze, E904)

A resin secreted by the lac bug, used to make candies, apples, and pills shiny. Look for:shellac, confectioner's glaze, resinous glaze, E904.

6. Isinglass

7. Castoreum

Secretion from beaver glands, used as "natural vanilla flavor" in baked goods, candies, and ice cream. Rare today but legal — and never labeled by name.

8. Vitamin D3 (cholecalciferol)

Usually extracted from lanolin (sheep's wool) or fish liver oil. Fortified plant milks may contain it. Vegan D3 from lichen is available — look for "vegan D3" on the label.
