Ingredients
- 3 very ripe bananas (about 350 g peeled)
- ⅓ cup (80 ml) neutral oil or melted vegan butter
- ½ cup (100 g) brown sugar
- ¼ cup (60 ml) plant milk
- 1 tsp vanilla extract
- 1¾ cups (220 g) plain flour
- 1 tsp baking soda and ½ tsp salt
- 1 tsp ground cinnamon
- Optional: ½ cup chopped walnuts or dark chocolate chips
Method
- Heat the oven to 180 °C (350 °F) and line a 23 × 13 cm loaf tin with baking paper.
- Mash the bananas well in a large bowl. Whisk in the oil, sugar, plant milk and vanilla.
- Add the flour, baking soda, salt and cinnamon. Fold gently until just combined — a few streaks of flour are fine.
- Fold in nuts or chocolate if using, then pour into the tin.
- Bake 50–55 minutes until a skewer comes out clean. Cool 15 minutes in the tin before slicing.
Cook's notes
- The blacker the banana skins, the sweeter and moister the loaf.
- Overmixing makes it dense — stop as soon as the flour disappears.
